Watermelon Juice

Ingredients
  

  • 8 cups cubed seedless watermelon (about 2½ pounds)
  • ⅓ cup freshly squeezed lime juice (about 3 limes)
  • 4 fresh mint sprigs
  • A small pinch of sea salt per serving Optional

Method
 

  1. Remove the rind from the watermelon and cut the flesh into small cubes.
  2. Add the watermelon cubes to a blender and blend until smooth.
  3. Add the freshly squeezed lime juice and blend briefly to combine.
  4. Add the mint sprigs and gently press them against the side of the blender with the back of a spoon to release their flavor. Remove the mint after a minute or two.
  5. Pour the juice over ice and serve immediately, or refrigerate for at least 2 hours before serving.
  6. Garnish with a lime slice and fresh mint if desired.

Notes

  • Use a ripe, sweet watermelon for the best flavor. Added sugar usually isn’t necessary.
  • Lemon juice can be used instead of lime juice.
  • Strain the juice through a fine-mesh strainer if you prefer a smoother drink.
  • For a watermelon hydration drink, combine equal parts watermelon juice and coconut water with a small pinch of sea salt.
  • Leftover juice can be refrigerated in an airtight container for up to 2 days, although it tastes freshest on the first day.
  • For a frosty version, freeze some of the watermelon cubes before blending.
