Ingredients

  • 10 oz (320 g) canned tuna, drained
  • ¼ cup mayonnaise
  • 3 tablespoons chopped pickles
  • 3 tablespoons finely chopped red onion
  • ½ cup canned corn, drained
  • ½ cup frozen peas
  • ¼ large green apple
  • ½ cup jalapeño potato chips
  • 1–2 teaspoons wasabi paste
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • ½ teaspoon oregano or Italian herbs
  • 1 teaspoon agave or honey Optional
  • Salt and black pepper, to taste

Method

  1. Dice the green apple and finely chop the pickles and red onion. If desired, soak the onion in cold water for 10 minutes, then drain well.
  2. In a large bowl, whisk together the mayonnaise, lemon juice, red wine vinegar, wasabi, oregano, salt, and black pepper until smooth.
  3. Add the tuna, corn, peas, apple, pickles, and onion. Stir gently until everything is evenly coated.
  4. Taste the salad and add more wasabi if you’d like extra heat.
  5. Chill in the refrigerator for about 10 minutes.
  6. Just before serving, crush the jalapeño chips. Fold half into the salad and sprinkle the remaining chips over the top.
  7. Serve in sandwiches, pita bread, lettuce cups, or with crackers and enjoy.

Notes

  • Soaking the onion helps soften its sharp flavor while keeping it crisp.
  • Start with less wasabi and adjust after tasting.
  • Add the crushed jalapeño chips only before serving so they stay crunchy.
  • Chilling the salad for a few minutes gives the flavors time to blend together.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
