Ingredients
  

For the Pudding
  • 2 medium ripe bananas, mashed (about 1 cup)
  • 1 cup coconut yogurt or plain Greek yogurt
  • 2 teaspoons pure vanilla extract
  • 4 tablespoons vanilla protein powder
  • 1 tablespoon tapioca starch
  • Pinch of kosher salt
For Assembling
  • 1 (9-ounce) container whipped topping, thawed
  • 24 gluten-free shortbread cookies or vanilla wafers
  • 2 ripe bananas, sliced into thin rounds

Method
 

Prepare the Pudding
  1. Add mashed bananas, yogurt, vanilla extract, protein powder, tapioca starch, and salt to a blender.
  2. Blend until smooth and creamy, scraping down the sides once if needed.
  3. Transfer the mixture to an airtight container.
  4. Refrigerate for 4 hours, or until thickened.
Assemble the Dessert
  1. Place one cup of thawed whipped topping into a mixing bowl.
  2. Gently fold the chilled banana mixture into the whipped topping until evenly combined.
  3. Spoon some pudding into the bottom of six serving glasses or ramekins.
  4. Arrange banana slices around the inside of each glass.
  5. Sprinkle crushed cookies over the pudding.
  6. Repeat the layers if desired.
  7. Finish with whipped topping, extra cookie crumbs, and one banana slice for garnish.
  8. Serve immediately or keep chilled until ready to enjoy.
