Ingredients

  • 1 fresh ginger root about 4 inches, washed and sliced
  • 4 cups water
  • 3 tablespoons freshly squeezed lemon juice around 1½–2 lemons
  • 2 tablespoons honey or agave syrup for a vegan version

Method

  1. Add the sliced ginger and water to a saucepan. Bring to a boil over medium-high heat.
  2. Lower the heat and let it gently simmer for about 15 minutes.
  3. Strain the ginger water into a heatproof jug or bowl. If you’d like, save the ginger slices for another batch.
  4. Stir in the fresh lemon juice and honey until the honey has fully dissolved.
  5. Taste the tea and adjust with a little more lemon juice or honey if needed.
  6. Pour into mugs and serve while warm. A thin lemon slice can be added on top if desired.

Notes

  • Fresh lemon juice gives the cleanest, brightest flavor.
  • Start with one lemon, then add more if you prefer a tangier drink.
  • The balance of ginger, lemon, and honey can easily be adjusted to suit your taste.
