Method
- Add the sliced ginger and water to a saucepan. Bring to a boil over medium-high heat.
- Lower the heat and let it gently simmer for about 15 minutes.
- Strain the ginger water into a heatproof jug or bowl. If you’d like, save the ginger slices for another batch.
- Stir in the fresh lemon juice and honey until the honey has fully dissolved.
- Taste the tea and adjust with a little more lemon juice or honey if needed.
- Pour into mugs and serve while warm. A thin lemon slice can be added on top if desired.

- Fresh lemon juice gives the cleanest, brightest flavor.
- Start with one lemon, then add more if you prefer a tangier drink.
- The balance of ginger, lemon, and honey can easily be adjusted to suit your taste.
